Sweet and Sour Pork

Pork ribs, golden, tender, and caramelized, surrender to a tangy-sweet sauce. Each bite bursts with sweet heat, a nostalgic dance on your palate. Recreate a taste of home. Chopsticks poised, let the journey begin.

Ingredients:

1. Pork chops (no specific amount)

2. Ginger (sliced)

3. Scallions

4. Vinegar

5. Crystal sugar

6. Dark soy sauce

7. Cooking wine (optional)

Method:

1. Cut the pork chops into roughly 5 cm long pieces

2. Blanch the ribs by pouring water into a wok or a pot to fully submerge the ribs. Turn on the heat and bring the water to a gentle boil and let simmer for about 3 minutes. During this process, a greyish foam will appear on the surface of the water. Use a spoon to skim it off. Then drain the ribs.

3. In a clean wok or pan, heat up some oil. Then turn the heat on high and add ginger, scallion, and crystal sugar and fry until the ginger and scallion change colour.

4. Add in pork chops and enough water to cover the chops. Stir fry together.

5. Add vinegar and continue to stir fry until the pork chops change colour. If you want to add cooking wine, do so in this step.

6. Season the dish to your personal taste. You can add more soy sauce, vinegar, or granulated sugar to your liking.

7. Let the chops simmer over medium-low heat until the meat becomes tender and the sauce thickens. Remember that the sauce will also thicken as it cools down.

Serving Recommendations:

- Sprinkle some toasted sesame seeds and chopped scallion over the ribs to garnish

- Best served with steamed white rice. The sauce is also delicious when mixed with the rice
