Stir-Fry Glass Noodles

This dish presents a delightful fusion of textures and flavors. Tender glass noodles intertwine with crisp cabbage. Each bite offers a harmonious balance of savory, slightly sweet, and tangy notes, making it a satisfying and comforting dish that's perfect for any meal.

Ingredients:

1. Glass noodles: 2 bundles

2. Cabbage: 1/2 head

3. Eggs: 2

4. Garlic: minced

5. Dried chili flakes: optional

6. Dark soy sauce (for coloring): a dash

7. Cooking oil: for frying

8. Vinegar: a splash

9. Oyster sauce: 1 tbsp

10. Dark soy sauce: 1 tbsp

11. Light soy sauce: 2 tbsp

12. Salt: 1 tbsp

13. Sugar: 1 tbsp

14. Chicken bouillon or Chinese thirteen-spice powder: 1 tbsp

15. Garlic chives (optional): for garnish

Method:

1. Soak the glass noodles in warm water until softened (do not use boiling water).

2. Add a dash of dark soy sauce for coloring. Add a bit of cooking oil to prevent sticking.

3. Fry the eggs until cooked through, then set aside.

4. In the same pan, stir-fry minced garlic and dried chili flakes until fragrant.

5. Add the cabbage and drizzle a splash of vinegar around the edges of the pan. Stir-fry until the cabbage is partially cooked.

6. Add the soaked glass noodles.

7. Mix together 1 tbsp oyster sauce, 1 tbsp dark soy sauce, 2 tbsp light soy sauce, 1 tbsp salt, 1 tbsp sugar, and 1 tbsp chicken bouillon or Chinese thirteen-spice powder. Pour this mixture into the pan.

8. Add the cooked eggs. Optionally, add garlic chives.

9. Stir-fry until everything is well combined and cooked through.
