Stir-fried Tomatoes and Scrambled Eggs (sweet version)

Experience the delightful harmony of flavors in this dish. Succulent tomatoes, gently sweetened, intertwine with fluffy scrambled eggs, creating a dish that's both comforting and satisfying. Perfectly balanced with a hint of sugar, it's a simple yet irresistible treat that pairs beautifully with a bowl of steaming white rice.

Ingredients:

1. 6 large eggs

2. 8 tomatoes

3. Cooking oil

4. Salt

5. Sugar

6. Scallions - finely chopped (optional: for garnishing)

Method:

1. Crack the eggs into a bowl, and beat together with a 2 pinches of salt until evenly combined.

2. Pour the beaten eggs into a wok/pan with some cooking oil and scramble. Just before it's fully cooked through, transfer them to a plate.

3. Cut the tomatoes into wedges, and add them into the wok/pan a little bit of additional oil, and stir-fry until it is almost completely softened.

4. Just before the tomatoes are fully cooked, add the eggs back into the pan and add 4 teaspoons of sugar, stir-fry together until the tomatoes are completely softened. If there isn't enough moisture in your wok/pan, add in a bit of water and continue to stir-fry. Add in more sugar until you reach your desired taste. Your dish is ready to be enjoyed.

Serving Recommendations:

This dish is best served over a bowl of white rice.
