Onion and Black Pepper Beef Stir-Fry

Bringing back memories of bustling family gatherings, where the sizzle of beef in a hot wok mingled with laughter. Each bite, rich with black pepper and tender beef, transports you to a warm kitchen filled with the comforting aroma of home-cooked meals.

Ingredients:

1. Beef (tenderloin or marbled beef)**: 300g (about 10.5 oz)

2. Onion: 1/2 large

3. Green bell pepper: 1

4. Red bell pepper: 1

5. Garlic: 1/2 bulb

6. Baking soda (for washing beef): 1 tbsp

7. Marinade:

- Scallion juice: 1 tbsp

- Ginger juice: 1 tbsp

- Cooking wine: 1 tbsp

- Oyster sauce: 1 tbsp

- Light soy sauce: 1 tbsp

- Dark soy sauce: 1 tbsp

- Black pepper: 1 tbsp

- Cornstarch: 1 tbsp

- Oil: 1 tbsp

- Egg white: 1/2

8. Oyster sauce: 1 tbsp

9. Chicken bouillon: a pinch

10. Sugar: a pinch

11. Black pepper: 1 tbsp

12. Cornstarch and water mixture: a small amount

Method:

1. Prepare the beef by slicing it into long strips. Mix the beef with 1 tablespoon of baking soda, rub it in, then rinse the beef thoroughly and pat it dry. In a bowl, combine the beef with the marinade ingredients: 1 tablespoon each of scallion juice, ginger juice, cooking wine, oyster sauce, light soy sauce, dark soy sauce, black pepper, cornstarch, oil, and half of an egg white. Mix everything well and let the beef marinate for 20 minutes.

2. Heat a pan or wok over high heat until it is very hot. Add the marinated beef and stir-fry quickly until the beef changes color. Remove the beef from the pan and set it aside.

3. In the same pan, add a little oil if needed and sauté the minced garlic until it becomes fragrant. Add the sliced onion, green bell pepper, and red bell pepper. Stir-fry these vegetables over high heat.

4. Add 1 tablespoon of black pepper to the vegetables. Return the beef to the pan and stir-fry everything together. Add 1 tablespoon of oyster sauce, a pinch of chicken bouillon, a pinch of sugar, and a small amount of cornstarch slurry. Stir-fry until all the ingredients are evenly mixed and heated through. Be careful not to overcook to keep the beef tender.

5. Transfer the stir-fry to a serving plate and enjoy it immediately. Serve with steamed rice for a complete meal.

Serving Recommendations:

Serve hot, accompanied by steamed jasmine rice or fried rice. A side of stir-fried greens or a simple cucumber salad would complement the dish well.
