Braised Pork Belly
Indulge in the melt-in-your-mouth delight of Braised Pork Belly, lovingly simmered in a savory blend of dark soy sauce, crystal sugar, and aromatic spices. With each bite, experience a harmonious fusion of flavors that dance on your palate, creating a culinary masterpiece worth savoring.
Ingredients:
1. Pork belly, 1 kg
2. Crystal sugar
3. Dark soy sauce
4. Scallions - chopped
5. Aniseed
6. Ginger
Method:
1. Cut the pork belly into roughly 3 cm by 3 cm pieces.
2. Then, add these pieces into a pot and cover fully with cold water (using cold water is very important). Slowly bring the water to a boil. Once the pork turns white, turn off the heat and carefully drain the water from the pot.
3. Rinse the pork pieces with warm water to remove any blood and other residue. Set aside.
4. Heat a pot with oil over medium heat and add a few pieces of crystal sugar. Add in the pork pieces and stir-fry until the pork browns.
5. Add in dark soy sauce, adjusting the quantity to your personal taste preferences, but 4-5 tablespoons is recommended. Also add in scallions, a few slices of ginger, and a few pieces of aniseed.
6. Pour boiling water into the pot to cover the pork without submerging it entirely.
7. Stir well and taste the liquid in the soup, adjusting the flavours as you wish.
8. Once the water comes to a boil turn the heat to medium-low and cover the pot with a lid, ensuring to leave a small gap for the steam to escape.
9. Allow the pork to cook for about an hour, ensuring the water doesn't completely evaporate during this process. If water levels reduce significantly, add more water and adjust taste as needed. The pork is done after roughly an hour until the pork is tender and the flavours are well-developed.
Serving Recommendations:
It is recommended to serve this dish over a bowl of rice by adding a few pieces of meat, and a couple spoonfuls of the sauce for flavour.
